You should be able to create them through the end user UI. Go to the space you want to create the project in and you should see a "Create Project" action. If that isn't what you are seeing then we probably have a configuration problem on the sandbox.

For the most part the Org Chart is intended to be driven by data in LDAP or Active Directory. For deployments that are not based on the directory there are a couple of options for setting up that data.

The first option has a user administrator entering the reporting structure in the admin console in a tabular form.

The second option is to have people drive the Org Chart socially. Basically, you can set yourself as the manager for someone else. However, this change needs approval and both the current manager and the person who's manager is changing are emailed to let them know that you made the change so there is social pressure to avoid messing around.

For 2.0 there is no general calendar available. The calendar view of tasks and checkpoints in 2.0 is intended as a simple view into the next two weeks of activity on the project. We plan to include a more general calendar in a future release in the medium term, though.
